SPOTLIGHT by Symposium Essen + Trinken: Mut, Gegensätze und neue Wege für die Foodbranche

Am 25. September 2025 hieß es: Bühne frei für die Food-Zukunft. Bei SPOTLIGHT by Symposium Essen + Trinken servierten vier Stimmen der Branche kompakte Einblicke und neue Perspektiven, die zeigen, wohin die Reise geht – und welche Gegensätze dabei aufeinanderprallen. Die digitale Session war ein Vorgeschmack auf das, was CONNECT 2026 am 10. März in München groß auf die Bühne bringen wird.

Zwischen Funktionalität und Sehnsucht nach Authentizität
Food- und Nachhaltigkeitsexperte Daniel Anthes entwarf ein Panorama der Ernährung von heute und morgen: von der Maximierung – „Protein everywhere“ – bis zur Rückbesinnung auf Authentizität, Handwerk und das Kochen mit Feuer. „Wir bewegen uns in einem ständigen Dualismus: zwischen Food Science Fiction und Romantisierung, zwischen Dystopie und Sehnsucht“, so Anthes. Doch die Zukunft sei nicht Schwarz oder Weiß, sondern entstehe oft in einer versöhnlichen Synthese: Flexitarismus, Hybridprodukte oder Trends wie Fast Good (schnelle, aber qualitativ hochwertige Küche), Local Exotics (exotische Zutaten, die lokal angebaut werden) oder Newstalgia (neu interpretierte Klassiker, die Tradition und Innovation verbinden).

Sein Fazit: „Veränderungsprozesse sind voller Gegensätze – doch genau aus diesem Spannungsfeld entstehen neue Esskulturen und zukunftsfähige Modelle.“

Strukturen und Zusammenarbeit als Schlüssel für Innovation
Wie schwer sich Innovation in Unternehmen durchsetzt, zeigten Prof. Dr. Carsten Leo Demming, Studiengangsleiter BWL-Food Management an der DHBW Heilbronn, und Jochen Matzer, Geschäftsführer von Food Harbour Hamburg. Aufbauend auf einer ersten Studie zu Innovationsbarrieren gaben sie exklusive Einblicke in die neue Untersuchung „Bridging Barriers to Innovation: Reloaded“. Ihr Befund: Häufig blockieren Strukturen und Kulturen mehr als fehlende Ideen. Lösungen liegen in abteilungsübergreifenden Prozessen, klarer Kommunikation und einem Führungsverständnis, das Innovation bewusst Raum gibt.

Es darf nicht darum gehen, das eigene Kuchenstück zu vergrößern – sondern gemeinsam einen größeren Kuchen zu backen“, so Demming.

 

KI im Spannungsfeld von Chance und Verantwortung
Publizist, Berater und Kommunikationsdesigner Hendrik Haase brachte den digitalen Nerv der Zeit ins Spiel: künstliche kulinarische Intelligenz. Während ChatGPT längst Milliarden von Nachrichten pro Tag verarbeitet, steckt die Foodbranche noch in den Startlöchern. Noch dominiert der Einsatz von KI im Marketing, in Forschung und Produktentwicklung dagegen herrscht Zurückhaltung. Bedenken zu Ethik, Haftung und Datenschutz sind groß – und doch glauben 84 Prozent der Branche an die Chancen, die künstliche Intelligenz bietet.

Sein Appell: „Die Revolution beginnt im Kleinen: Man muss sich an künstliche Intelligenz ranwagen – und Schritt für Schritt hineinwachsen.“

 

Passend dazu schloss Daniel Anthes den Kreis mit einem klaren Credo an die Lebensmittelbranche: „Bleibt mutig!“

Edmund Pillekamp started his career as a retail salesman.
